Green Bean Casserole

Mushroom Gravy

4 cups green beans, blanch and chilled

1 ½ cup fried onions

Green Bean Casserole Method

  1. Stir the gravy, beans and ½ the fried onions in a small pan. 
  2. Bake at 350°F. for 25 minutes or until the bean mixture is hot and bubbling.  Stir the bean mixture.  Sprinkle with the remaining onions.
  3. Bake for 5 minutes or until the onions are golden brown.

Mushroom Gravy

1 tablespoon truffle oil

½ ea onion, diced

½ cups flour

1 clove garlic, minced

1 cups mushroom, chopped

2 ounces Butter

1 quart mushroom stock or vegetable stock

½ tablespoons black pepper

½ tablespoons salt

1 sprig charred rosemary

½ tablespoons soy sauce

Gravy Method

  1. Brown the onions in butter over medium-high heat until browned. Add mushrooms and garlic and cook until lightly browned. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the veges soak it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the stock, a little at a time, stir and let cook and thicken before adding more. Then salt, pepper and rosemary.

  1. Cook the gravy, stirring frequently, until it thickens. Let cook for 15 minutes at low heat making sure not to scorch the bottom of the pot. If it gets too thick too soon, just splash in another 1/2 cup of stock or more if needed. Add soy sauce, then taste and adjust the seasoning.

Fried Onions

1 ea onion, sliced thin

½ cup Buttermilk

1 cup flour

1 teaspoon Salt

½ teaspoon Pepper

1 teaspoon Paprika

½ teaspoon Baking Soda

Fried Onion Method 

  1. Fry until crispy
