Meatballs

Ingredients

- 1/2 each onion, minced

- 2 cloves garlic, minced

- 2 lbs ground beef

- 3 each eggs

- 1/4 cups parmesan cheese

- 2 tablespoons parsley, chopped

- 2 cups bread crumbs

- 1 tablespoon cream

- 2 teaspoons granulated garlic

- 2 teaspoons salt

- 1/2 teaspoon chile flakes

- 1/2 teaspoon black pepper

- dash hot sauce

- 1 tablespoon flour

 

Method

1. Combine all ingredients into a bowl. Knead together until combined, but only until mixed. 


 

Grilling Meatballs

Ingredients

- 2 tablespoon olive oil

- 3 cloves garlic smashed

- 1  rosemary sprig

- 1 batch meatballs, skewered

 

Method

1. Scoop into 2 oz. meatballs and round. Skewer and chill. Heat grill over medium high heat. Combine smashed garlic and olive oil. Oil grill liberally and place meatballs onto grill. Using rosemary as a brush to baste meatballs with olive oil.

2. Let cook and sear on one side for 2 minutes. Turn 1/4 turn and cook for 1 minute. Repeat until internal temperature of 165 degrees.
