Ingredients

   Beet Salad

- 3 beets, topped (reserved) and roasted

- 4 oz. goat cheese

- 4 oz. huckleberries

- Honey Vinaigrette (recipe follows)

- 2 oz. toasted walnuts

 

Beet Salad Assembly 

Vinaigrette

- 1/2 cup honey

- 1/4 cup apple cider vinegar

- 1/4 cup lemon juice

- 1/2 teaspoon Dijon mustard

- 1 teaspoon salt

- 1 teaspoon granulated garlic

- 1 teaspoon granulated onino

- 1tablespoon red onino, minced

- 2 cups vegetable oil

 

Honey Vinaigrette Method

1. Blend everything together but oil, stirring to combine thoroughly.

2. Slowly drizzle in oil while whisking until all oil in incorporated.
