Waldorf Salad Ingredients

½ cup walnuts, toasted

½ cup plain greek yogurt

2 tablespoons mayonnaise

2 tablespoons minced fresh flat-leaf parsley

1 teaspoon honey

¼ teaspoon cardamom, grated

¼ teaspoon nutmeg, grated

½ lemon, zest finely grated, then juiced

½ teaspoon sea salt

½ teaspoon black pepper

2 large apples, tart, cored and sliced

2 ribs celery (with leaves), shaved, leaves separate

¼ cup golden raisins

½ cup grapes, sliced

2 oz. blue cheese

1 head radicchio lettuce, divided into leaves


Waldorf Salad Method 

  1. Whisk the yogurt, mayonnaise, parsley, honey, lemon juice and lemon zest in a large bowl and season generously with pepper and salt.
  2. Add half the walnuts, apples, celery, grapes, raisins and radicchio to the bowl with the dressing. 
  3. Arrange the remaining lettuce leaves on a plate. Sprinkle with remaining half of ingredients and serve.
