Ingredients

   Meatloaf

- 6 ounces bread crumbs

- 1 teaspoon ground black pepper

- 1.2 teaspoon cayenne pepper

- 1 teaspoon chili powder

- 1 teaspoon rosemary chopped

- 1 tablespoon parsley chopped

- 1.1 onion, peeled and diced

- 1 carrot, peeled and diced

- 3 whole cloves garlic minced

- 3 lbs. ounces ground beef

- 1 1/2 teaspoons Dijon mustard

- 2 tablespoons Worcestershire sauce

   

Glaze

- 1/2 cup ketchup

- 1 teaspoon ground cumin

- dash Worcestershire sauce

- dash hot pepper sauce

- 1 tablespoon honey

 

Method

1. Heat oved to 325 degrees F.

2. In a bowl, combine all ingredients except the glaze. Combine thoroughly by kneading the meat mixture, but avoid over mixing the meat.

3. Pack this mixture into a 10-inch loaf pan lined with parchment paper. Bake for about 45 minutes until internal temperature reaches 155 degrees.

4. Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes. Remove from the oven and let loaf rest for 20 minutes before cutting.
